We whole-cluster press to minimize bitterness, and cold-settle the juice for several hours before fermentation. We ferment slowly, at cool temperatures in a stainless steel tank to preserve fruit flavors. When the wine approaches the desired level of sweetness, we abruptly drop the temperature to near freezing, making the yeast inactive, and causing them to settle out at the bottom of the tank. Finally, we filter the wine and bottle it very young, capturing all of the delicate fruitiness of the wine.
Clean and transparent wine, brilliant and pleasing to the eye, pale yellow colour with green glints.
High Aromatic intensity. The wine exhibits a classic Muscat nose such a fresh grape, white flowers (lemmon blossom and jasmine), citrus and rosewater.
A wonderful Muscat, in a medium bodied, medium sweet style. Good balance, and long aftertaste.
Delicate wine ideal to serve with foie, strong cheeses, or with midly sweet dishes, like Caesar salad, or desserts not very strong like applecake, crème brulee, etc.
